About beef's way to eat



Corned beef is slow cooked, so a crock pot is a great way to prepare it. More importantly, choose the right corned beef! Real corned beef is made from beef brisket. Great corned beef is from high quality beef. Most people look for the leanest cut they can find and then complain when it comes out tough. The higher the grade of beef the more fat is marbled into the meat. If you don't see streaks of fat in the meat it's not going to come out tender. Another thing to watch out for is "pumped beef". Our meat packers have learned ways to pump saline and meat tenderizer into beef and have it absorb without leaking out again. If your corned beef says 35% water added it's going to taste a little weird and you are paying 2-4 dollars a pound for that water. It extends shelf life for them too, so they can prepackage meats using cheap illegal labor while eliminating middle class jobs like mine.

why Korea like port belly?


Pork belly is a boneless cut of fatty meat. from the belly of a pig. Pork belly is popular in Asian cuisine, and forms a part of many traditional European dishes such as the Alsatian Choucroute garnie, the Swiss Berner Platte, and the German Schlachtplatte. In the United Statesbacon is most often made from pork bellies.
A 100-gram serving of pork belly typically has about 520 calories. The calorie breakdown is: 92% fat (53 g), 0% (0 g) carbohydrates, and 8% (9 g) protein.

This cut of meat is enormously popular in Chinese cuisine and Korean cuisine. In Chinese cuisine, it is usually diced, browned then slowly braised with skin on, or sometimes marinated and cooked as a whole slab. Pork belly is used to make Slowly Braised Pork Belly (紅燒肉) or Dongpo pork (東坡肉) in China (Sweet and Sour Pork is made with pork fillet). Koreans cook Samgyeopsal on a grill with garlic, often accompanied by soju. Uncured whole pork belly has more recently become a popular dish in restaurants in the United States as well.

As a Korean BBQ,we have many kinds of Soju here. But not everybody understand what is that if you are a not Asian.


Soju (Hangul 소주; Hanja 燒酒) is a distilled beverage native to Korea. Jinro and Lotte soju are the first and third top selling alcohol brands in the world.[1] Its taste is comparable to vodka, though often slightly sweeter due to sugars added in the manufacturing process. It is usually consumed neat.
Most brands of soju are made in South Korea. Though it is traditionally made from rice, most modern producers of soju use supplements or even replace rice with other starches, such aspotatoeswheatbarleysweet potatoes, or tapioca.
Soju is clear and colorless. Its alcohol content varies from about 16.7%, to about 45% alcohol by volume (ABV) for traditional Andong soju,[2] with 20% ABV being most common. It is widely consumed, in part, because of its relatively low price in Korea. A typical 375mL bottle of soju costs the consumer 1,000 to 3,000 South Korean Won in South Korea (roughly $1 to $3 United States Dollars). In the USA, it tends to cost substantially more – $5 or more.[citation needed]

Soju was first distilled around 13th century during the Mongol invasions of Korea. The Mongols had acquired the technique of distilling arak (aragh) from the Persians (Iran)[5] during their invasion of Central Asia/Middle East around 1256, then it was subsequently introduced to Koreans and distilleries were set up around the city of Kaesong. Indeed, in the area surroundingKaesong, soju is known as arak-ju (hangul: 아락주).[6]
From 1965 until 1999, in order to alleviate rice shortages, the Korean government prohibited the traditional distillation of soju from rice. Instead, highly distilled ethanol from sweet potatoes and tapioca was mixed with water, flavoring, and sweetener to create soju.[5] Although the prohibition has been lifted, cheap soju continues to be made this way. The Korean government regulates the alcohol content of diluted soju to less than 35%,[citation needed] but alcohol levels have continued to fall in order to reduce production costs.[7] The lower alcohol concentration also makes the drink milder to consume, which may broaden its appeal.
Several regions have resumed distilling soju from grain. Soju from Andong, South Korea is a traditional hand-crafted soju that has about 45% ABV.

Sake (/ˈsɑːk/ or /ˈsɑːki/)[1][2] is an alcoholic beverage of Japanese origin that is made from fermented rice. It may also be spelled saké.
In the Japanese language, the word sake refers to any alcoholic beverage, while the beverage called sake in English is termed nihonshu (日本酒, "Japanese liquor").

Sake is sometimes referred to in English-speaking countries as rice wine. However, unlike wine, in which alcohol is produced by fermenting sugar that is naturally present in grapes and other fruits, sake is produced by means of a brewing process more like that of beer. To make beer or sake, the sugar needed to produce alcohol must first be converted fromstarch.
The brewing process for sake differs from the process for beer, in that for beer, the conversion from starch to sugar and from sugar to alcohol occurs in two discrete steps. But when sake is brewed, these conversions occur simultaneously. Furthermore, the alcohol content differs between sake, wine, and beer. Wine generally contains 9%–16% ABV,[3] while most beer contains 3%–9%, and undiluted sake contains 18%–20% (although this is often lowered to about 15% by diluting with water prior to bottling).

Lantern Festival, 元宵节。


The Lantern Festival in China is a festival celebrated on the fifteenth day of the first month in the lunisolar year in the lunar calendarmarking the last day of the lunar New Year celebration. It is also known as the Yuanxiao Festival or Shangyuan FestivalChap Goh Meh Festival in IndonesiaMalaysia and SingaporeYuen Siu Festival in Hong KongTết Thượng Nguyên or Tết Nguyên Tiêu inVietnam; and, Koshōgatsu in Japan. During the Lantern Festival, children go out at night to temples carrying paper lanterns and solve riddles on the lanterns (simplified Chinese猜灯谜traditional Chinese猜燈謎pinyincāidēngmí).
It officially ends the Chinese New Year celebrations.
It is not to be confused with the Mid-Autumn Festival; which is sometimes also known as the "Lantern Festival" in locations such asSingapore and Malaysia.
In ancient times, the lanterns were fairly simple, and only the emperor and noblemen had large ornate ones[citation needed]. In modern times, lanterns have been embellished with many complex designs. For example, lanterns are now often made in the shape of animals. The lanterns can symbolize the people letting go of their past selves and getting new ones, which they will let go of the next year.

Yuanxiao

Tangyuan '湯圓' is a glutinous rice ball, first made 800 years ago, and eaten on the fifteenth day of the lunar New Year. The Chinese people believe the round shape of the balls, and the bowls in which they are served symbolize family togetherness, and that eating tangyuan may bring the family happiness and good luck in the new year.
